Artichoke Squares

Ingredients

Two (6 oz.) jars marinated artichoke hearts

1 small onion, finely chopped

1/4 cup fine dry bread crumbs

1/8 tsp. Pepper

1/8 tsp. Oregano

2 cups grated cheddar cheese (sharp)

2 tablespoons chopped parsley

1/4 tsp. Salt

4 eggs

Instructions

Drain artichokes, saving marinade from one jar. Saute onion in marinade. Cut up Artichokes. Beat eggs and add crumbs and seasonings. Stir in remaining ingredients. Turn into a greased pan. Bake 30 minutes at 325 degrees. Let cool a little before Cutting into squares. Serve hot or cold.

If you double recipe, fits into a 9x13 inch pan.
